It was a bitter cold night during the week we reached down into the
negatives here in Fort Collins. We were standing out in the lot
watching our breath materialize into cloudy puffs. "I don't know if I
like it that much to actually get it. I think I have my heart set on a
Subaru", I turned to tell my husband. "I don't think I do either. It
doesn't 'Wow' me, but let's see what they have to offer" he replied.
After standing out in the cold to then sit at the dealership desk and listen to their sales offer, which was ridiculous, we walked out. Then we drove down the street to another dealership before they closed, took one look at a Subaru that we loved and the deal was set in motion. We would pick it up the next day.
After our seamless and painless car buying experience, we realized that we hadn't had dinner yet. We drove down College on our way to pick up the kids from KidsTown with me naming every restaurant I knew of along the way seeing if anything struck our fancy. "How about Cafe Mexicali?" my husband excitedly asked. I was game for anything. So, Cafe Mexicali was on.
Cafe Mexicali has been a fresh Tex-Mex addition to the very large Mexican dining scene here in Fort Collins since 2005. Taking after other large chains known for homemade freshness and large portion sizes, Cafe Mexicali has another location in Greeley and hopes to expand even more. They pride themselves on making it "as fresh as it gets" making pretty much everything on the menu in-house; tortillas, sauces, and vegetables cut often...
